Canan Koska Turkish Coffee is a 100% Arabica, medium roast coffee ground to the powder-fine consistency that traditional Turkish brewing requires. This is not a grind you can produce with a standard home burr grinder: Turkish coffee is finer than espresso, closer to flour, which is what allows the coffee to brew in the pot and settle into the bottom of the cup. The medium roast keeps the cup rounded and smooth rather than sharp, so it carries sugar well and works equally for a plain sade cup or a sweetened orta.

  4. Watch for the foam to rise. Just before it boils over, lift the pot off the heat, spoon some foam into each cup, then return the pot briefly to the heat and pour.
  5. Let the cup stand for thirty to sixty seconds so the grounds settle before drinking, and stop before you reach the sediment.
